This is a simple-to-use cookbook (with pictures) of recipes from my hometown, El Puerto de Santa María, Spain. All 52 recipes in my book -- from tapas to sauces to main dishes to desserts and drinks -- are ones that I have mastered over the past 55 years. I had the golden opportunity to watch my Mama cook these dishes at home, and to learn from her. Mama cooked all of her hot dishes on a coal stovetop until I was ten years old, before she was able to afford a butane gas stove. Everything she made tasted great.
Each recipe follows the same pattern: a brief description of the recipe, its ingredients, preparation and accompaniments. "Standards," such as paella, Spanish tortilla, albóndigas (meatballs) in tomato sauce, and flan are included, as well as some lesser-known recipes, like almejas a la marinera (clams in garlic sauce), croquetas (Spanish croquettes), gazpacho Andaluz (cold vegetable soup), and huevo a la flamenca (gypsy-style eggs), among many others. My favorite tried-and-true recipe for sangria also appears in my book, for those who responsibly enjoy adult beverages.
